Dolphin Injures Ribs, Brisket Next Up on Menu

Hot on the heels of a ribcage injury, the Hawaiian Dolphin has been replaced on this weekend’s casino menu with a hot Indiana-style Brisket. Vegas diners looking to enjoy the catch of the day will have to settle for the flat-cut, also referred to as the brisket. The brisket may be one of the least tender cuts of meat, but when slowly roasted, like right now, it can be one of the most tender and salty cuts.

Las Vegas butcher Jon Gruden expects the dish to be “seasoned yet bitter” for Sunday’s lunch serving.
